They make an effort to flaunt their elevated rank, sparing no expense on the kangaroo-hide chairs, imported French cutlery, and of course the million dollar view from the 55th floor of the Rialto Towers. That said, though the vibe in the restaurant may be grandiose, but is still surprisingly down-to-earth. The service is, of course, seamless; you will be greeted the moment you step out of the private elevator, your chairs will be pulled out for you.
One of the things Vue seems particularly proud of is creating an experience that their customers won’t forget easily. Smoked eel, white chocolate with caviar looks like a toffee but as you bite into it, the smoke eel flavour comes through to offset the sweetness in the white chocolate shell. BBQ lamb heart with pineapple and duck tongue with pepper. This is not something that you’ll normally expect in fine dining. Also, their Hawkesbury River School Prawns are crispy little morsels that are eaten whole alongside a fennel crème Fraiche. Seasoning is bold with a mix of herbs and spices, simply perfect.
